1 cup chopped barbecued pork
1 box (8.5-ounce) Jiffy corn muffin mix
1 egg
1/3 cup milk
1/2 cup shredded pepper Jack, or cheddar cheese
non-stick vegetable oil spray
8 paper baking cups

Directions:
Preheat oven to 400 degrees F.
Mix jiffy mix, egg, milk, and half the cheese in a bowl.
Spray baking cups (or pan, if no cups) with nonstick spray.
Spoon half the batter into baking cups (fills about 8).
Add meat, then top with rest of batter. Don't need to cover completely.
Top with cheese, then bake for 20 minutes in 400 degree oven.
Notes: Yum! Can use any BBQ meat in center. Can be tricky to get the cups coated enough not to tear up the muffins afterwards.
