Penne with Spicy Vodka Tomato Cream Sauce

Ingredients (4 servings):

1/2 lb penne pasta


2 tbs extra virgin olive oil

1 (3.5 oz) link sweet Italian sausage
2 cloves garlic, crushed
1/4 teaspoon crushed red pepper flakes

1 (15 oz) can tomato sauce
1/4 teaspoon salt

1 tablespoon vodka
1/4 cup whipping cream

2 tablespoons parsley (optional)
1/2 teaspoon basil (optional)

Directions:

'Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

In large skillet, heat oil over moderate heat. Remove casing from sausage and add to skillet. Cook, breaking up meat, until brown. Add garlic and red pepper and cook, stirring until garlic is golden brown.

Add tomatoes and salt; bring to boil. Reduce heat and simmer 15 minutes.

Add vodka and cream and bring to boil. Reduce heat to low and add pasta, toss for 1 minute. Stir in fresh parsley and serve.'

Notes: We usually double the Italian sausage and skip the parsley. Have also used this sauce on ravioli. Easy, quick, and super delish! This is definitely a favorite of ours.
